
This Breakfast Cake is loaded with blackberries, pears and lemon flavor. It is drizzled with Agave—a plant based all natural sweetener with a low glycemic index (an excellent choice for folks watching their sugar intake).
INGREDIENTS
2 cups Pancake Flour
1 1/2 cup Sugar
1 Egg
1 stick Butter
3/4 cup Milk
1 teaspoon Lemon Extract
2 Pears
1 1/2 lb. Blackberries
Directions: Pre heat Oven 350 degrees. In a large bowl blend 1 cup sugar, and butter. Add lemon extract. Add egg to blend , slowly add Pancake Flour. Slowly add milk and blend until smooth.
Grease cake pan with butter or use PAM spray. Peel and slice Pears thin. Lay Pears on bottom of cake pan. Pour batter over Pears. In a small bowl sprinkle 1/2 cup sugar over Blackberries.
Arrange Blackberries over batter. Bake for 40 minutes or until brown. Test Cake with a toothpick ..stick pick in middle of cake
when tooth pick is clean the cake is done.
Glaze Topping :
3 Tablespoons Agave
1 teaspoon Lemon extract
Stir liquids and drizzle over cake.
