Looking for an easy inexpensive dessert for the family or the perfect addition to a pot luck dinner? Try an Old School favorite like Granny’s Bread Pudding. Cut into squares for serving a Crowd! (If Lemon is not your flavor use Vanilla Extract.) You are going to want to save this recipe because once folks try it, they’ll ask for it again and again.
16 oz, Frozen Collard Greens
4 ripe Plum Tomatoes
1 Medium sized Onion
1/2 cup Sun dried tomatoes
1/2 cup mild Salsa
2 cloves of garlic
1/4 cup Extra Virgin Olive Oil
pinch Cayenne Pepper
Salt to taste
Peel the onion and cut into thin slices
Heat the olive oil in a large pot
Sauté onions and garlic until onions are transparent
Add collard greens (allow greens to sauté for 5 minutes)
Slice tomatoes into thin slices, add to sauteé pot
Sauté the mixture until tomatoes create a sauce
Add 1/2 cup of salsa
Cover with 2 cups water
Slice sun-dried tomatoes, into thin strips
Add sundried tomatoes to pot
Salt to taste
Add a pinch of Cayenne pepper
Allow Greens to cook for 50 minutes or until tender. Add water as needed.
